Chocolate Reese’s Cookies

Wow sorry for totally disappearing over the weekend! I honestly couldn’t even tell you that I did anything super exciting, it was just relaxing and wonderful! I hope you all had wonderful weekends too!

Lately wedding stuff has been clogging my mind and taking up my extra time, not a bad thing at all though πŸ™‚ We are down to 4 1/2 months! It seems so unreal from the 10 months we had when we got engaged! Invitations, DJ music lists, decorations, and videographers are the topics as of right now.

I did do one exciting thing over the weekend the boy and I made a delicious dinner Saturday night. We made Jessica’s Creamy Tuscan White Bean Pasta. It was absolutely amazing!

THEN….. today I made the most amazing chocolate cookies ever. And I seriously mean ever, because I don’t usually like chocolate cookies. The perfect combination of chewy, crunchy, and soft and just the right amount of chocolate!

I’ve had this idea in my head to make Reese’s cookies for dayyyyyssss now and I finally did this afternoon and this recipe paired perfectly with the Reeses πŸ™‚

If you love cookies half as much as I do… buy this book! It is amazing and I use it every time I need a new or basic cookie recipe, it has got everything. And who doesn’t love King Arthur! Now, back to the cookies……

It all started with Reese's cups

And then it turned into something wonderful!

Chocolate Reese’s Cookies

Adapted from this recipe

1 cup (2 sticks) butter

2 cups sugar

2 eggs

2 tsp vanilla

3/4 cup cocoa powder

1 tsp baking soda

3/4 tsp salt

1/2 bag of Reese’s, chopped

Preheat oven to 375. Mix sugar, eggs, butter, and vanilla. Beat with an electric mixer, add cocoa powder and beat until combined. Next add salt, baking soda and flour. Stir with a mixing spatula to combine. Roll into balls, on the smaller side (they spread a lot) and bake. Bake each tray about 10-15 minutes, or until slightly flattened. Remove from oven and place broken reeses cup pieces on top of cookies and place back in the oven for 2-3 minutes. Remove and let cool on a wire rack.

It’s time for WIAW!

My morning started off on the right foot….. an 8 mile run that felt WONDERFUL! I haven’t run that far since before break, but I felt great and I did it!

Breakfast

This was eaten around 9:30 after my run and a shower. I was starving and craving a HUGE yogurt bowl, so that is just what I had!

This was eaten around 6:30-7. In celebration for out 3 year anniversary the boy made me dinner, since I worked later into the evening. He did a wonderful job, I devoured nearly every bite!

3 years

Three years ago today I said yes to dating this boy, the man that in just 4 1/2 months I will be saying “I Do” to.

 

It has been an incredible 3 years of fun and laughter and sharing our lives together!

It all started one evening at a campus ministry group on the campus of our college. We both had never seen each other there before and we started talking…… we both attended a lot of the same ministries and groups on campus and were able to get to know one another through those times as well as through times of serving others in the community and at the various parties and gatherings our groups on campus would have. Though when we met it was just 2 weeks before Christmas break.. and even though our friendship was so new we stayed in touch throughout the break and once we came back from break we started hanging out even more. We went on little dates to the free movies in the student union, play pool, and would watch The Office every week together.

Apparently everyone else saw it, but me. Don’t get me wrong I was interested in him but I wasn’t sure were this friendship was going so when he finally asked me out I didn’t know how to respond…. of course/obviously I said yes. We were at a church game night and we were getting ready to leave when he pulled me close and asked if I would like to be “ya know more than friends”. I giggled, turned red, and said yes.

Since that awkward time. We have had some incredible adventures together and have seen each other through the stressful times (both in our senior years, when we were in over our head with classes) and the best of times. I’ll let some of the pictures do the talking πŸ™‚

Oatmeal Cranberry Cookies

 

Are you still drooling from yesterday? I am… and I’ve eaten a gazillion of these cookies already!

I first made these cookies just before Thanksgiving and it has been my go-to, one-and-only, I-love-cookies, cookie recipe ever since. I’ve done them with just cranberries, just chocolate, and now I’m mixing it up and adding BOTH!

They are the perfect combination of sweet and nutty tasting…. and they are healthy because they have oatmeal in them AND fruit!

 

I added mini chocolate chips as well, because I just couldn’t decide if I wanted to make chocolate cookies or just plain cranberry but I figured chocolate never makes anything worse right? Right.

So there you have it…. I promise you won’t be able to just stop at one. Or maybe I just don’t have self control πŸ™‚

 

Oatmeal Cranberry Cookies

Adapted from Betty Crocker

 

1 1/2 cups brown sugar

1 cup butter, softened

1 tsp vanilla

1 egg

2 cups oats

1 1/2 cups all purpose flour

1 tsp baking soda

1/4 tsp salt

1 cup of desired mix-ins (Cranberries, Chocolate chips, Peanut butter chips, Nuts, etc)

 

Preheat oven to 350

Mix sugars, butter, vanilla and egg together. Add dry ingredients and mix thoroughly. Add mix ins. Bake 8-10 min.

Special Chili

I hope you all had a wonderful weekend! I know I did!

It was one of the first weekends in a long time that I woke up Saturday morning and realized I had absolutely NOTHING planned or that I had to do! Which was probably a good thing since I woke up to nearly 6 inches of snow on the ground and wanted nothing to do with it. I decided that itΒ  was the perfect day to spend alll day long in the kitchen, so I did just that!

IΒ  text the boy and told him that I really wanted to bum it with him all day and he needed to come over and bake/cook with me. He said he really wanted some chili, so I delivered. Some very special chili! No… there isn’t any secret ingredient. The chili that we made on Saturday was produced from almost everything homemade.

We used ground venison from a deer, hunted by the boy.

The turkey stock we used for the broth was made from the carcass of a Turkey, that was hunted by the boy.

The tomatoesΒ  used were grown and canned by my aunt and I this summer

And the corn that was used was from the Amish farmers market in town that we had frozen…..

Which left canned beans and canned roasted peppers as being the only things that were bought at the store πŸ™‚

This boy and I sipped some Hot Chocolate while the chili was cooking on the stove and I pondered the next project which turned out to be Banana bread AND Oatmeal Cranberry Chocolate chip cookies, a recipe for another day!

Flying By

Wow this week just flew by! It’s FRIDAY already! Wahooo!

I didn’t have internet for a few days this week, so I got stuck in “old fashioned mode”, even after we got our internet connection back. I’ve spent a lot of the week reading two books which I have been working through for a while now. I’ve also been getting my 8 hours… funny how the lack of Pinterest and blog reading = quality rest!

I’m currently working through The Bailey Flannigan series by Karen Kingsbury. Some people I know think her books are cheesy and predictable but I enjoy them. You don’t have to think a lot while you read them and they are nice love story-like books without making you blush while you read them. I’m also making my way through The New Rules of Lifting For Women by Lou Schuler.

Due to my recent work schedule I have a lot more time to focus on lifting and I miss being as strong as I used to be. My workouts have mainly consisted of cardio for the last 8 years of my life with spouts of weight training here and there.Β  But I really want to commit to a plan, because I have so little experience I am really liking how they break down everything in the book and show you how to do things. I’m excited to get started in the gym!

It’s been awfully chills this week, so I’ve stuck to the treadmill, and I’ve also been doing some ab workouts with this lady…

I haveΒ  fallen in love with a new cereal… something that was clearly made just for me! Kashi GoLean Crisp! Cinnamon Crumble! I love all of Kashi’s cereals and loved the toasted berry crisp they came out with last summer, but nothing compares to my love for cinnamon! I was actually at the store picking up something else when an empty shelf with one lone box of this stuff caught my eye πŸ™‚ It. Is. Incredible.

Tastes like Cinnamon Toast Crunch or cinnamon topping on a warm apple crisp, but sooo much better for you!

I had it for breakfast yesterday, and I’m not going to lie it was like dessert for breakfast… incredible! I could eat this alll the time!

I also got my hands on these this week as well. I LOVED the Apple Cinnamon one, because you just can’t go wrong with that combination. However, I found the Passion Fruit one to be incredibly sweet…. too sweet for my taste buds is almost unheard of!

Peanut Butter and Jelly Oats

So delicious! I’m not an oats person normally, but I was chilly after my run this morning and decided it was a perfect morning for a warm breakfast. This bowl seriously tasted like a peanut butter and jelly sandwich! In the mix:

Eaten during my last few hours of work and while I was waiting for my twin brother to arrive, so we could go out to dinner!
