Potluck Dinners

The day started off with a wonderful run by the river, as usual. Though I am starting to get some pain in my ankle and quad, so I’m seeing a few days of rest from running in my near future in order to heal. The last thing I need before I even start training is an injury!

I came home and refueled with some Greek yogurt, apricots, and fig jam. Seriously a delicious combination!!!!

Then it was time for the market to prepare for a potluck we were having with the other nutrition girls! We decided to have a big get together for our Professor (who’s class ends Friday) because he is the one who put on the wine and cheese party for us!

The rest of the morning was dedicated to napping, reading, and catching up on blogs!! I am beat tired this week for some reason. I’ve decided that I need to start sleeping a little better and absolutely need to up my food intake which has been lagging since arriving in Rome due to a busy schedule, inability to find a grocery store for several days, and not knowing where to eat. I’ve also been enjoying all the fresh produce, but one cannot live simply off of fresh fruits and veggies. At least this girl can’t, I need some sustenance, some whole grains and protein!!!Β  However, we received our itinerary for our trips next week (we are leaving Rome for a week and traveling various other places for our Mediterranean diet class!!!!!) and we are going to be eating at some balling restaurants which I cannot wait for!!!!

I also decided it was time to pack in the protein, my muscles are hurting!!!! I bought eggs at the market and promptly returned home and made myself a delicious lunch!

The rest of the afternoon was filled with some snackage of trail mix, a bowl of cereal, and some fruit. All while attempting at writing a paper that really just resulted in hours of procrastination and a walk around Rome. Did anyone actually think it was possible to be 100% studious while studying abroad? I didn’t think so.Β  Then it was time to prepare for our potluck dinner! My friend and I offered to make a roasted veggie salad, which turned out beautifully! The other girls on our floor put together some melon wrapper in prosciutto and the girls upstairs put together various pasta salads and cheese spread…. I’ll let the pictures do the talking πŸ™‚

I ate this plate x2! Everything was amazing! Roasted veggies, pasta salad, panzanella salad, cheese, and the best bread I've ever eaten! I also had a plate of fruit on the side!

The boys (meaning the one boy in our program and the TA) made tiramisu! It was wonderful!

The rest of the evening was filled with great conversation and music! Nothing like listening to some Frank Sinatra in Italy πŸ™‚

It was a fun evening and made us all even more excited to travel, eat good food, and enjoy each others company!

Now back to that paper I’ve been procrastinating…. I’ve got 2 paragraphs and it is due tomorrow morning!

Fruity Turkey Tacos

This is gonna be a quick one, but I just had to share this dinner with you!!! This weekend is the last weekend of school, and I happen to have two finals on Monday so I am studying away. Obviously I need some brain food and to finish up some things I have around here before I head out of town. Hence the fruity turkey tacos!

I had some pineapple salsa in the back of the fridge from something I had made a few weeks ago, so I decided it was time to use it. I also had some ground turkey I had bought, but didn’t want to make burgers since we just had some awesome buffalo burgers. Then there was the birth of the fruity turkey tacos…. it’s fun to say πŸ™‚

I started cooking the ground turkey and when it was almost done, added some black beans, pineapple salsa, and some canned pineapple chunks for added fruitiness!

Once all mixed together I plated them, with whole wheat tortillas, added a bit more salsa to the top, and some cheese and called it dinner. Delicious!

Quick, nutritious, and easy!!!

Fruity Turkey Tacos

1 lb. Ground Turkey

1/2 can of black beans

3 TB pineapple salsa

a few canned pineapple chunks

Favorite whole wheat tortilla

Favorite taco toppings

I also have a few salads and eats to share from the week! It has been a fruityΒ  kind of week. We had the warmest weather we have had in awhile and I was REALLY craving the fruits and veggies!
