I want a Burger!

My day started off as everyday this lovely break has….. with a run and some strength training. Then I ate the same breakfast I’ve been eating the past few days.. with a bit of a GRAND addition!!! WELCOME my new favorite combination……plain greek yogurt mixed with strawberry kefir. The combination makes for an amazingly delicious whipped yogurt! I added pomegranate seeds and butter toffee almonds, perfection!

Next came a morning out with mi padre. He had to run a whole bunch of errands so I decided to tag along, since I didn’t have much to do today. It was nice to spend some time together, before I head back to school. Well when we got home I sure was hungry!!!! We had tacos for dinner last night so I whipped up a super yummy salad with the leftovers; guac, hummus, peppers, tomatoes, carrots, olives, and some pita chips on the side.

The rest of my day was filled with catching up on all of your lovely blogs, and typing up some old family recipes which I am trying to add to my recipe box.  After a few weeks of not cooking much I was ready to whip up a meal for my parents, so I informed my mom I would be taking over dinner this evening. And boy, I wanted burgers! Now lets be real, when I say this it is often followed with a response of “A what???” <insert weird face here>. Ya see I don’t eat real “hamburgers”….. but I sure do LOVE a good turkey, veggie, or buffalo burger!  So I whipped up a favorite dinner some feta cheese stuffed turkey burgers, sweet potato fries, and salad for a delicious dinner.

Feta Stuffed- Turkey Burgers

1 lb ground turkey

1/2 onion, chopped

1 Tbsp oregano

2 tsp basil

2 tsp Parmesan cheese

2 Tbsp bread crumbs

1/4 cup feta cheese, crumbled

Directions:

In a bowl add chopped onion, turkey, herbs, bread crumbs, and parmesan cheese. Form mixture into 4-5 burger patties, depending on how big you want them to be. Using your thumb place a small indent in the middle of each burger, place desired amount of feta cheese in the indent and cover by rolling outsides of burger up.

Grease  a skillet with oil or cooking spray and heat over medium heat. Cook burgers, flipping and browning each side. Cook until cooked through about 10-15min.

I finished my evening with some more greek yogurt and kefir. Topped with dark chocolate chips and pomegrante seeds. Definitely a must try!
