Peanut Butter Chocolate Chip Cookie Bars

This is obviously going somewhere good….. I mean butter, eggs, sugar, and peanut butter ALWAYS results in a beautiful ending.

I’ve had quite the casual weekend, a little homework here, a little baking there, some hanging out with the boy… its been productive AND relaxing, who knew that existed! I have quite the crazy next two weeks before spring break, why did all of my professors decided to cram a majority of the semesters exams and projects all BEFORE spring break… we do have another 6 weeks of school, right?!

I also had a CRAZY adventure going grocery shopping this weekend…… It was windy, like 35 mph steady with 55 mph gusts every 5 seconds, or so they say.

I had planned to go grocery shopping so by golly I was going, but on my way there I noticed all the traffic lights were out. As I was turning into the shopping center I realized that Giant and Walmart were both without power….. and closed. So I ventured my way to Wegman’s and it was nuts, but there was power! After this little adventure I finally got my shopping done. I am telling you go buy Chobani’s new flavors….. it made the madness absolutely worth it! The Mango and Lemon are AMAZING!

Anyhow…. all weekend I was hardcore craving  a little comfort food, something tasty. Obviously that always leads me to chocolate or peanut butter, or both in this case. My mom used to make these bars quite often when we were growing up, and I haven’t had them in ages. I also decided it was time to whip something up from my stash of “mom’s recipes”, because that hasn’t happened in a few weeks. Which was probably the cause of my need for something yummy, she really is the best!

So my journey in wanting to bake these really began around 12:30am last night, but being as I was out of eggs, and I only had a spoonful of peanut butter left. It had to wait until this morning… So you can bet that as soon I was back from my run, I was baking.

Peanut Butter Chocolate Chip Cookie Bars


½ cup butter

¾ cup creamy peanut butter

1 ¾ cup sugar

1 ½ tsp vanilla

4 eggs, slightly beaten

1 ½ cups flour

½ tsp baking powder

¼ tsp salt

2 cups chocolate chips

Directions:

Preheat oven at 350 degrees

Prepare 13×9 pan with non stick spray

Melt butter. Add peanut butter; stir until melted. Stir in sugar and vanilla. Add eggs and stir with spoon until well blended. Add flour, baking powder, and salt. Stir until blended. Stir in chocolate chips. Spread batter into prepared pan. Bake 35 min or until top is golden brown and edges firm.( it took about 40 minutes in my oven). Cool. Cut into bars, large or small whatever you prefer! I did a little of both 🙂

Lost Camera and Note-worthy eats!

Hey everyone! Sorry I haven’t been posting too regularly I’ve been swamped with school work and unfortunately it looks that way until spring break! Don’t worry I’m not abandoning you, I will try to post as regularly as I can! Another added stress of school is I totally thought I lost my camera this week, it was NO where to be found! FORTUNATELY Andrew found my camera in the couch cushions at his house! It must have slipped down in after I uploaded some pics last weekend. That being said I had some awesome eats, but couldn’t photograph them for you 😦 BUT I’ve decided to share them with you anyway along with some awesome eats I’ve had since I found my camera!

First, note-worthy eats:

Baked sweet potatoes with cinnamon, salt, pepper, and baked beans on top! I know…. sounds TOTALLY weird, but trust me on this one! It was almost like dessert! I had some broccoli with feta cheese on the side to balance out the sweet and salty. And just think you are totally getting your fiber for the day! Hands down favorite and easiest meal of the week!

Buffalo burgers with swiss and mushrooms… I love buffalo meat! I wish it was easier to find and cheaper, but it is a price I will pay! Andrew treated this time 🙂 These were delicious AND I got to cook them on my new George Foreman grill!

Homemade Chili with avocado! Every couple of weeks I make a pot of chili it is such an easy and healthy thing to have on hand when you are busy! I’ve been craving avocado and finally caved and bought one. It was delicious on this chili and I have to say this is the best pot I’ve made 🙂 I had some toast with some avocado too…. I sure got my healthy fats this day!

Ezekiel cinnamon raisin bread with plain greek yogurt/pumpkin spread! This was breakfast this morning it was delicious!!!!!! I toasted some Cinnamon raisin bread <— find me a good loaf of this stuff and I’ll love you  forever, nothing better in my world than AWESOME handcrafted bread! The Ezekiel stuff is good to have one hand…. so anyway I mixed about 1 TB plain greek yogurt with 1 tsp pumpkin butter and made a little spread, it was great! I also had 1/2 a grapefruit.

Mustard Chicken melt This was lunch today! I scored some awesome fresh baked french bread at Wegmans yesterday, fresh as in it was still warm when I put it in my cart fresh! So I decided to make a little open faced chicken melt with it. I heated up some TJ precooked chicken strips, put some mustard on the bread, layed the chicken on top, and melted a piece of swiss cheese over it. It hit the spot wonderfully!

Moral Issues:

So maybe this is just me being crazy, which is highly likely but basically I today at lunch I was munching on some veggies and roasted red pepper hummus. When I pulled a red bell pepper strip out of my baggie to dip in the hummus, I felt it was is a little morbid….. like hey raw bell pepper I’m going to dip you in your cousin…. roasted red pepper hummus. Regardless I did it and it was tasty, but it just seems wrong. Anyone else have these weird thoughts? OK… you can declare me nuts.

I’m pretty much just hanging out doing work, and will probably have it on in the background… I like football but I don’t necessarily have a team I avidly follow. Tonight I will be rooting for the Steelers since I’ve grown up in PA and all….

Snippets of the fitnessnfoodie life

So this semester is really starting off right. I’m not sure if it is because it is my last fully loaded semester, or the 95 other things that have slightly changed in my life in the past few weeks. I have had a much more balanced outlook. I have been spending time with friends, enjoying my food and this blog sooo much more, exercising only when I feel right, having awesome conversations, digging deep into the word and spending time in prayer, and just plan feeling good about who I am.

My running schedule has taken a tiny hit, because of the freezing cold weather, snow, and just not enough time. But I have been able to feel good about this. Basically my semester schedule allows for me to have one day on, one day off which my body seems to like ALOT. After years of pounding out miles after miles, day after day, and while doing that not fueling it properly it has taken quite the beating. Have you let your body rest lately? It might need it! I have also been focusing on working out in more ways than just running…. since the summer I have started strength training a bit more, introducing the  DVD’s below <— amazing way to tone, gain strength, and work out in the warmth!

These women rock! They are all really great and I absolutely notice a difference! No boring workout DVD's here!

Here are my workouts for the week:

Sunday: Rest

Monday: 6 miles

Tuesday: 2o min treadmill, 20 min bike, 15 min abs

Wednesday: Rest

Thursday: 5.5 miles

Friday: 15 min Legs

Saturday: 15 min abs, 15 min arms, 40 min run

Not only do I have one day on, one day off with my running schedule I have one day on, one day off of classes and work as well! My mind can be free at least one day a week! Now I’m sure once classes really get rolling I will be a bit more bogged down with studying, but I’m sure that won’t leave out time for all the good eats I have been making lately! Here is the run down of some DELICIOUS meals I’ve had lately!

Leftover whole wheat blueberry pancakes with microwaved apples, a spoonful of peanut butter, and some maple syrup. AMAZING, seriously I didn't want it to end!

The boy makes these pancakes for me from time to time. They are literally the best pancakes around, I am so spoiled! We had them for dinner on Tuesday, so Friday for lunch I decided to finish them off.  After coming back from a morning of classes, and a freezing cold walk home I wanted something warm and comforting for lunch. I decided the pancakes were a must, but I needed a little bit more than pancakes, then the juices starting flowing and before I knew it I was digging into something amazing! Blueberry pancakes with peanut butter tastes like PB &J but like x10 better, as if that was even possible! The warm apple was a great addition as well, we all know I got my fruit servings for lunch on Friday!

Jessica's chocolate chip cupcakes paired with her vanilla bean buttercream icing... again AMAZING combo! You really can't go wrong with any of her recipes!

Lets just say Wednesday night I was in a bit of a baking/cooking frenzy! I baked cookies at the boy’s house, then came home and made that awesome pesto encrusted salmon. However I just wasn’t content for the night I wanted to make something more, and since we didn’t have any dessert at the apartment I turned to Jessica’s blog and got my head thinking. I took one of her cupcake recipes and another icing recipe and paired them together. This combination is truly amazing! And guess what I began the process at 8:30 and was back sitting on the couch at 9:30 with everything done! So moral of the story, super easy and super delicious!

The boy and I were grocery shopping and decided to grab something from wegman’s for dinner. Their prepared food is soooo good, but pretty pricey so I rarely give in. However, it was getting late and I was starving and didn’t know what I would be able to cook by the time I got home before consuming mass quantities of food before hand in turn, not being hungry for the dinner I just made. So we settled on getting a few things. I selected the squash, spinach, onion, and craisin salad because I have been craving squash like crazy lately! On the drive home I decided that I really wanted pasta and perhaps a tiny bit of meat. So when we arrived at his house he got to cooking the chicken and I the pasta. I added a little of both some thyme, salt, pepper, and basil and I had myself a super gourmet meal for $3.50! Am I the only one who does this? Gets take out and then changes it up.

I surely hope you all are having a good weekend. The boy and I are celebrating 2 years together! I really couldn’t be happier!
